Our Halloween Night
We didn't have any plans this Halloween, which is unusual because the day is normally filled with parties and costume appearances. I figured it would be a rather underwhelming Halloween. But I was wrong, it turned out to be such a fun night. We dressed up, had a yummy dinner of soup + salad from Whole Foods, greeted the trick or treaters at our door with chocolately goodness, carved pumpkins, roasted seeds, and baked/devoured a delicious pumpkin meringue pie (which turned out to be heavenly as you can imagine). I actually really enjoyed staying in and spending time with my little Green Bay Packers family.
Because of Finn's helmet, we decided to base our costumes around that. Of course, he was the football player. I painted his helmet with acrylic paint and slapped a Green Bay sticker on the side. We found his Brett Favre jersey onesie on ebay, and I made his little football pants. Complete with mascara for the eye grease. Noah was the coach, he already had the hat and we got his vintage pullover from ebay as well. I was the referee (I was going to be a cheerleader but I thought, I don't think my postpartum tush would look so hot in a cheerleading uniform).
Now for some recipes. You haven't really tried pumpkin seeds until you've tried this creation we invented a few years ago. And that pie. Oh that pie. It took a little work and it was an all day affair but it was worth it cause it was pumpkin pie times ten.
Parmesan Italian Pumpkin Seeds
a batch of raw pumpkin seeds
olive oil
parmesan cheese
italian seasoning
garlic salt
1. Preheat oven to 350 degrees. Rinse the seeds and pat dry, then lay on a cookie sheet in a thin layer.
2. Drizzle with olive oil and mix the seeds around so all the seeds are coated.
3. Sprinkle lightly with garlic salt and italian seasoning, then sprinkle parmesan cheese on top.
4. Bake in oven for about 20 minutes or until the cheese and seeds turn golden brown and crispy.
