When Noah and I were in Alaska we were enjoying a bowl of hummus and pita at a local restaurant.
When we both started quoting the movie Betwitched.
"I think those people over there are finished with their plate of "Hoooomous." (Will Ferrell's line)
Well at the time we didn't know it was from Bewitched.
It took us 3 years to figure out what it was from.
It drove us nuts.
Whew, it's a relief we figured it out.
That's what I think of when I eat hummus.
It. is. so. good.
And you haven't tried hummus until you've tried this recipe.
Roasted Red Pepper Hummus
2 tablespoons Tahini
1 tablespoon lemon juice
2-3 cloves garlic, crushed
1/2 cup roasted red pepper (we used bottled)
1 1/2 teaspoons ground cumin
1 teaspoon ground coriander
1/4-1/2 teaspoon cayenne pepper *
1/2 teaspoon kosher salt
Fresh ground pepper
Blend it all together and you've got a delicious and healthy treat.
The great thing about hummus is you don't just have to eat it with pita chips.
I put it on my turkey sandwiches, replacing the mayo.
Tonight I'm making hummus vegetable wraps.
But then again the simplicity of pita's and hummus is pretty satisfying.
